ixxxix. Apple Muse.--Take Applelys an sethe hem, an Serge¹ hem þorwe a Sefe in-to a potte; þanne take Almmaunde Mylke & Hony, an caste þer-to, an þan take Pepyr, Gyngere, & Brede, y-grounde y-fere and temper it vppe with þe same brothe, or ale draft, & coloure it with Safroun, & Seþe it to-gederys, & serue it forthe.

NICCOLO'S RECIPE
serves 6-8

1 qrt.  apple sauce (apples, water, corn syrup)        6-8 saffron threads
1 c.  (US) Almond Milk                                        1/4 c. +/- fine bread crumbs
½ tsp. Minced ginger                                           1/4 c.  Sam Adams Ale
½ tsp. ground black pepper
 

Combine all ingredients and boil together.  Adjust texture with bread crumbs as needed.  Honey may be added to adjust sweetness.

(We used apple sauce from a jar for conveniece sake in this feast due to time and space constraints.  To accomplish from apples: cut into and boil 5-8# firm cooking apples.  Pass through a sieve or food mill into a pot.  Proceed as above.)
